SO glad you posted this recipe! Everyone at work is unloading their zucchini onto my desk--I love it, and making some zucchini waffles seems like a great change of pace...
my fav way to eat is slice the green vegtable (get a big one so that they look like silvwer dollars, soak them in a bowl of 3 eggs and a little water or mix the water and egg concoction and brush it on the rounds coat each round and dip both sides in smushed crackers or panko bread crumbs .
pour a litle olive oil in fry pan and fry each side until crispy and lightly browned. I season mine with the red robin spice you can buy at wa la red robin. or you can sprinkle it with onion powder or garlic drain on paper owl and enjoy. I am not a good vegtable eater, love green salads and relish trays,but like paula dea I love butter and any thing fried or dipped in olive oil this is good stuff
Thanks for the idea! We are about to plant zucchini and I've been on the hunt for ways to use it up... I mean totally enjoy all the vegetable goodness!
